    Made cioppino for Christmas Eve dinner. Used it to cover the seven fishes classic Italian dinner. Used bay scallops, calimari, mussels, clams, shrimp, cod, and Dungeness crab. Big hit. Happy New Year.

    I've seen a lot of cooks making cioppino. None of them added chilly flakes. The cioppino has to be a bit specie. Great

    No! True Californians do NOT call shrimp “prawns”🦐 🍤 We call prawns “prawns”. The are different animals 😐. Your a cooking professor cmon! Shrimp belong to suborder Pleocyemata, while prawn species belong to the Dendrobranchiata suborder. Maybe reference Perl’s “Fishwife Pearls” recipe book. It’ll elevate your Cioppinos. 🤘

    This is the best. I used to love turkey , but two decades of people obsessed with making turkey not turkey have ruined it. “Juicy” turkey is disgusting. If it leaves liquid on your plate, it’s not juicy, it’s waterlogged.

    outstanding! Cioppino is my favorite "go to" dish. To me it HAS to have Dungeness cracked crab, large shrimp or Prawns, Sea Scallops and firm white fish in it. A couple things you left out that I put in mine are Shallots, and Saffron.

    Absolutely fantastic. I ate this exact method last night. Amazing. Be careful about the "Fish Stock". If your do not make "Fish tock then buy fish stock. THE FISH STOCK ADDS AN AMAZING TASTE. Please get fresh San Francisco Sour Dough bread and toast it. Bon Appetit. gse

    She may be a culinary profesional, but that doesn't mean she knows what she's talking about. I'm sorry to tell you but if your turkey always taste like cardboard you are not using enough seasoning. Don't listen to this nonsense. Far better recipes on youtube. Yes it takes more work but it's definitely worth it. The rest of the culinary world is not delusional, she is.

    Hi Mary! Thank you for your recipes. I wish I'd found you 8 years ago! I started w "Put The F***ing Turkey In The Oven" which is pure GOLD on several levels. I hope I can "do" the caramel sauce....your recipe/method w be my 3rd attempt at caramel sauce-yours seems approachable lol, 3rd one's a charm!

    Looks like the big ones are king trumpet and the “oyster” mushroom might be a maitake mushroom also called sheep’s head. That being said I’m very new to mushrooming so what the heck do I know. 🙃. Thank you for the fabulous recipe.

    I feel so validated! I've never understood all the anxiety and sometimes silly methods - especially the dangerous deep-frying method - of trying to inject flavor into what is pretty much a very bland bird. My husband usually does the turkey each year, but this year I convinced him to let me handle it. I patted the 12 pound bird dry, spread room-temp butter all over it, added salt & fresh ground pepper and popped it into a 400 degree oven for about 20 minutes or so until the skin started to brown. Then I lowered the temperature to 300 and in about 2 hours it was done. It was pretty and the flavor was fine. Just fine. I poured the drippings into the gravy I had already made and it was delicious as was the cranberry sauce I made the day before. On my plate I covered the dressing, mashed potatoes and the turkey with the gravy and put a dollop of the cranberry sauce on each bite and it was delicious. The turkey was basically a platform for all the delicious and rather decadent sides. Best Thanksgiving meal ever! I'm on your team, Tante Marie!
